  2. This looks yummy! You might want to try an 1/8 of the agave. Even though it is a 'natural' sweetener it is still sugar!

  3. Thanks for sharing that Catherine!

  5. This is from the book "The Paleo Diet for Athletes."

    Avocado-Cucumber Salad
    1 medium cucumber thinly sliced
    1 yellow bell pepper, sliced
    1 tablespoon lime juice
1 jalapeno pepper, seeded and finely diced
    1 teaspoon minced onion
    Lettuce
    1 avocado, sliced
    fresh parsley

combine cucumber bell pepper, jalapeno pepper, lime juice, onion. Pile mixture on lettuce in center of each plate. Add avocado slices and garnish with parsley.

servers 4 (I just chopped up the avocado and I let the salad (not lettuce) sit in the lime juice (I added a little lemon and olive oil) for awhile before we ate.

    Enjoy!

  6. I made a very simple version of paleo pancakes this morning. It was a super easy and delicious recipe:
    1/4 cup coconut milk,
    1/4 cup almond flour,
    1 egg.
Blend together, pour onto hot pan in little cakes. I also cooked up some blueberries to put on top with a dollop of plain yogurt.

  9. I've gotten some almond (and coconut) flour from the Bulk Barn near Sobeys in the north end. I've also made my own in our food processor.

  11. A treat for the sweet tooth ...

    fruit
    coconut milk
unpasteurized cream (the more you put in the more like ice cream it is)
Magic Bullet (or a blender if you are boring)

Voila - I am sure you could put nuts or protein powder

    Pumpkin

  12. http://www.freecoconutrecipes.com/recipe

delicious muffin recipes and other things made with coconut products ... I buy almond flour and coconut flour at Dad's market! I also use only half of the honey and they are still sweet and delicious .. also if you use coconut oil instead of butter then they are even sweeter (so even less honey)
    Enjoy P

  13. I coconut flour. I really enjoy feeling full when eating a small baked item as opposed to the desperate need for more that follows grain/sugar rich baked foods.

Did anyone measure themselves at the start of this? If not go for it it is really nice to see the changes. Rob and I both did. We are too close in size on some measurements. LOL
