Paleo Challenge #2 Respond Here
Here are the comments and recipes from the previous paleo challenge. If you are looking for paleo ideas this is the place to go. Please respond to all things paleo related on this post.
PAELO Breakfast Bars 1 ¼ cup blanched almond flour ¼ teaspoon celtic sea salt ¼ teaspoon baking soda ¼ cup grapeseed oil ¼ cup agave nectar 1 teaspoon vanilla extract ½ cup shredded coconut ½ cup pumpkin seeds ½ cup sunflower seeds ¼ cup almond slivers ¼ cup raisins In a small bowl, combine almond flour, salt and baking soda In a large bowl, combine grapeseed oil, agave and vanilla Stir dry ingredients into wet Mix in coconut, pumpkin seeds, sunflower seeds, almond slivers and raisins Grease an 8x8 baking dish with grapeseed oil Press the dough into the baking dish, wetting your hands with water to help pat the dough down evenly Bake at 350° for 20 minutes Serve Makes 12-16 bars

Avocado-Cucumber Salad 1 medium cucumber thinly sliced 1 yellow bell pepper, sliced 1 tablespoon lime juice 1 jalapeno pepper, seeded and finely diced 1 teaspoon minced onion Lettuce 1 avocado, sliced fresh parsley
combine cucumber bell pepper, jalapeno pepper, lime juice, onion. Pile mixture on lettuce in center of each plate. Add avocado slices and garnish with parsley.
servers 4 (I just chopped up the avocado and I let the salad (not lettuce) sit in the lime juice (I added a little lemon and olive oil) for awhile before we ate.
I made a very simple version of paleo pancakes this morning. It was a super easy and delicious recipe: 1/4 cup coconut milk, 1/4 cup almond flour, 1 egg. Blend together, pour onto hot pan in little cakes. I also cooked up some blueberries to put on top with a dollop of plain yogurt.
delicious muffin recipes and other things made with coconut products ... I buy almond flour and coconut flour at Dad's market! I also use only half of the honey and they are still sweet and delicious .. also if you use coconut oil instead of butter then they are even sweeter (so even less honey) Enjoy P
I coconut flour. I really enjoy feeling full when eating a small baked item as opposed to the desperate need for more that follows grain/sugar rich baked foods.
Did anyone measure themselves at the start of this? If not go for it it is really nice to see the changes. Rob and I both did. We are too close in size on some measurements. LOL

This looks yummy! You might want to try an 1/8 of the agave. Even though it is a 'natural' sweetener it is still sugar!

ReplyDeleteI've gotten some almond (and coconut) flour from the Bulk Barn near Sobeys in the north end. I've also made my own in our food processor.
