  4. although it is killing me to respond as a "nonpaleo" i have to admit Brendaleo's chips are outstanding!! we are currently munching on them and sipping red wine (i'm sipping, Brenda is gulping?!) Darc, I've been doing a little research and i'm finding that white wine and red wine are not all that different in sugar content... although i like my white wine very dry so maybe that makes the difference? anyway, enjoy your paleo dinners, i'm off to cook potatoes, rice, spaghetti and fresh bread for dinner lol....

  5. Hey Everyone - The Farmer's Market is now open again on Saturdays at the Cathedral Community Centre! There's a rather excessive selection of baking, but ignore all that and head straight for the fresh tomatoes, cukes, basil, sprouts and various selections of local meats! Plus, for a special non-cheat treat, buy some frozen prairie cherries (especially good for putting in those almond butter balls y'all seem to be making!)! Yum yum yum!

  8. Week one is done and I have to admit it went pretty well. Other than really craving chicken noodle soup and crackers when I got sick (I resisted) I didn't feel like there was much missing from my diet. Lots of changes...but it's all been very good. Can't wait to get back into flux!!

    I'm curious...what's everyone doing for breakfast variety? I usually have a frittata for breakfast, but would like some variety in the mornings.

    Also, found that I was missing ketchup (on occasion) and mayo (it goes so nicely with sweet potato fries when mixed with chili powder) so I found these recipes on the Downtown Winston Crossfit. I haven't tried them yet...so if anyone does...post how they work out.

    Paleo Ketchup (adapted from here)
    1 small can (384 mL/12 oz) of plain, sugar-free tomato sauce
    1 small can (6 oz) tomato paste
    2 tsp vinegar (I used apple cider)
    3/4 tsp garlic powder
    1/2 tsp onion powder
    a pinch of ground cloves
    1/4 tsp allspice

    Combine all ingredients in a small sauce pan and simmer for 10-15 minutes. Let cool and transfer to container and then into fridge.

    This recipe omits the sugar/artificial sweetener. Also, this does not last as long as store bought (no preservatives) so its good for a few weeks.

    Paleo Mayonnaise
    This is actually really easy to make with a blender. I adapted the recipe from here (I dropped out the salt). I think this is delicious compared to store bought mayo and now I use it a lot.

    1 whole egg
    1 egg yolk
    1 cup oil (canola or olive)
    1 T. fresh lemon juice
    1 T. red wine vinegar
    1 tsp. mixed pepper
    1/4 tsp. dry mustard

    Add all ingredients except oil to blender. Set blender to a lower setting like ‘Cream’ and start it up. SLOWLY add oil in a thin stream until mayo starts to thicken, at which point you can add more quickly. Finished mayo will not blend anymore in blender, but will still be runnier than regular store bought mayo. Transfer to container and refrigerate.

    This contains raw eggs so it doesn’t keep very long (1-2 weeks). It only makes a cup and I think it tastes great so it doesn’t last that long for me.

    Note on oil: I use 3/4 cup canola oil and 1/4 cup olive oil. Using all canola is a little bland, but using all olive is too strong a taste for me (not to mention a bit pricey). Use whatever combo you like best. I’ve also used the light olive oil with good results (but that’s also pricey).

  9. Yesterday after the workout a bunch of folks went for coffee and surprise surprise ended up talking about food and "good" cheats! I loved hearing about how everyone negotiates these sorts of decisions.

    Generally, I haven't been struggling with "cheating" but this week with life and work becoming even more stressful than normal I did struggle. So, dear friends, I'm looking for some strategies to avoid "stress" induced eating.

    Any thoughts?

  10. I find the best thing that I can do is to plan ahead and make sure that I carry extra snacks (like nuts) with me. I also cooked up a few new treats on the weekend (nut butter balls, the avacodo deviled eggs) and have those available for small snacks when I needed. I found they were helpful when I wasn't feeling well, but still wanted to munch on something.

  12. A breakfast I like that is easy is a coconut milk smoothie.

    For example in a blender put a large handful (or two of spinach, some frozen berries and a can of full fat coconut milk).

    Yum and easy!

    I've been trying to have a cup of herbal tea instead of a stress snack. That hasn't always happened but it takes awhile to make a habit right? If you think the tea won't cut it you can add a bit of coconut oil right to the tea to add more to it. You might need to stir before each sip though to keep the oil throughout and not just on the top!

  13. Heh Debbie..my breakfast usually consists of a hard boil egg or two and cut up tomatoes, avocado, artichokes and one piece of the soft cheese..
    My favorite lunch is broccoli coleslaw and then i add the following: almonds, pumpkin seeds, cut up red pepper strips, avocado, shrimp and then i sprinkle some unsweetended coconut over it and then add a vingrette dressing. My mid afternoon snack is a bowl of blue berries with cream or high fat plain yogurt with no sweetner..and then i snack on snap peas and any other veggies i have around. For a treat I really enjoy my newly found almond nacho chips dipped in salsa or with avocado (can you tell i love avocado???)

For a treat i really enjoy my newly found almond nacho chips ("paleo nacho chips -barbells and bacon") with homemade salsa and/or avocado..can you tell i love avocado! I also really enjoy drinking water with cut up lemons in it. I find if i drink alot of water throughout the day it helps take care of those snack attacks cause the water kinda keeps you full!!!!

  15. Yeah I agree that a good way to resist cheating is to plan ahead with your snacks. I pack a pretty big lunch for work - that includes cut veggies, a salad, whatever main meal I have on hand (spaghetti squash with tomato sauce & veggies and a bit of cheese was yesterday) plus some toasted nuts & a piece of fruit. Seems to keep me going so far.
    I also tried those nut balls but my almond butter was too runny and I ended up having to freeze them to get them to solidify at all - they were heavy & yummy - and I added mucho coconut to them to get them heavier. Will try again with another type of almond butter though cause they were a hit with everyone in my house!

  18. Just made an awesome lunch by adding blueberries to my ground bison (in addition to yellow string beans and cabbage). Yay berries+meat!

    ps. For those of you still doing dairy: Brenda mentioned the high-fat plain yoghurt -- do you guys eat the astro balkin style? It seems to be the simplest yoghurt on the market, 6% fat and sooooooooooooooooooo good.

  25. Here is a quick and easy lunch (I've had it for breakfast too). Egg drop soup! I make chicken bone broth with the leftovers from our chickens and have containers of broth in the freezer. Let me know if you want to know how to make bone broth and I can post that.

    So I thaw broth, add seasoning if necessary (depends on the batch of broth!). Sometimes I saute onion first. Add spinach or bok choy to the broth and cook. Meanwhile mix a eggs with a bit of milk and sometimes paremesean cheese. Pour into the boiling broth a drop at a time. Enjoy.

    I don't put amounts because it depends on what you need. When I make it for lunch I use lots of broth 10 to 12 eggs and LOTS of spinach and then I feed three hungry smaller people and me.

  28. I made another Vegetable Frittata last night and have been experimenting with a replacement for the potato crust that the recipe calls for. I had tried parsnips, but didn't like the flavor that they added. Last night I tried it with sweet potatoes and it's fantastic. Just add a little water to the shredded sweet potatoes so they can absorb the sea salt and will become a little stickier when you put them into the bottom of the pie plate.

    I did try that coconut fish I mentioned a while ago and it was yummy. My favourite turkey burger recipe that I just converted to paleo:

    Coriander Ginger Turkey Burgers
    1 egg, lightly beaten
    2 tbsp braggs (or some sea salt if this isn't okay)
    2 green onions, chopped
    2 cloves garlic, minced
    1 tbsp minced fresh ginger
    1/3 c. chopped fresh coriander
    1/3 c. ground almonds (pecans work too)
    1/4 tsp pepper
    1 lb lean ground turkey.

    Mix this together and fry them up! Yummy with a bit of dijon

  30. This is for all who plan on feasting on "Bugs Bunny" for easter here is a recipe that i came across for you:

    Rabbit Roasted with Herbs

    2 tablespoons canola oil

    1 rabbit (about 2 ½ pound, cut into 6-8 pieces)

    Fresh ground black pepper

    1 medium yellow onion, halved lengthwise and slivered

    1 large, minced garlic clove

    2/3 cup chicken or vegetable broth, salt free

    1 teaspoon fresh rosemary or ½ teaspoon dried

    2 tablespoons flat leafed parsley, chopped

    Preheat the oven to 350 F. Place the oil in a large, heavy skillet over medium-high heat. Brown the rabbit pieces in batches until golden, about 5 to 7 minutes per side, sprinkling with pepper. Place the browned rabbit into a shallow baking pan. Add the onion to the skillet and cool over low heat for 7 to 10 minutes to soften. Add the garlic and cook two minutes more, stirring. Add broth and raise the heat; bring to a boil, scraping up the browned bits on the bottom of the skillet. Reduce the heat; add the rosemary and cook sauce for two minutes longer. Pour the sauce over the rabbit and bake for 45 minutes. To serve, place the rabbit pieces on a serving platter and pour all the remaining pan juices over the top of the rabbit pieces. Sprinkle with chopped parsley and serve immediately. Serves four.

  32. Here`s another veggie option that`s really quick and easy to prepare. Tastes great...I love using it when we have company for supper.

    Green Beans with Garlic Dressing

    2 lbs of green beans, ends trimmed
    ½ c of sliced or chopped almonds
    1 tbsp chopped fresh thyme

    Dressing:
    2 tbsp extra virgin olive oil
    1 tbsp fresh lemon juice
    1 tsp Dijon mustard
    2 cloves garlic, crushed
    ½ tsp lemon zest
    ½ tsp sea salt
    ¼ tsp black pepper

    Blanch beans in a large pot of boiling water for 4 minutes or until crisp-tender
    Combine all ingredients for dressing in a small bowl; stir with a wire whisk.
    Place beans, almonds, and thyme in a large bowl, add dressing and toss well to coat.

  33. I have a confession to make---i had a very weak moment--my mother in law sent home fresh home made potatoe perogies and when i got home threre was a pecan pie on my table!!!! I think it was a test and i failed miserably--i was telling myself all the way home--i do not want the pergoies--i will not eat them .they don't smell good and there is much better things that i can eat......i must have passed out when i saw the pie--and when i came to i found myself haven just eaten two perogies and starting in on the pie!!!!! I have no idea what happenend except right now i feel like crap!!!

  35. Brenda, I agree with Darci. Don't be so hard on yourself. The perogies and pie sound fantastic!

    My great weakness is when there's freshly made bread in the house (Jeff won't do Paleo with me...so there's still temptation around the house). I have given in a couple of times...but I enjoy it as my weekly treat (it's so yummy with butter!!), then I think about the overall results that I'm getting.

    This morning...I put on a skirt that was too tight at the start of the Paleo challenge. Today...it fits very nicely! I'm so happy that I'm inspired to keep working and keep looking for those little successes. The little things all count!!

  37. Mmm perogies.. LOL I would have had some I'm sure.

    Today I made a tomato soup and on a whim threw in some sausage (beef - grassfed). It was yummy! The kids liked it too and asked for seconds. We haven't been doing too many elaborate recipes, mostly having a salad at lunch (with protein) and cooking meat at supper served with veggies. How is everyone else doing?

  38. Things have been going pretty good with me...although I'm really craving bread this week!! I'm resisting because I keep thinking of that sluggish feeling I get after I eat it.

    I'm trying really hard to create variety in my cooking. This is something I'm not good at and it's been a struggle. I've gotten so accustom to the "quick" food from the grocery store that I really have to make an effort to meal plan, grocery shop and cook. But, I'm loving the results.

    I'm up for the "support: group idea, Brenda! If nothing else, we can share great ideas with each other!! I've learned a lot from talking with other people and reading the blogs.

Heh Debbie.I agree with you it certainly does take alot more planning cause by the time i get home from work i am starving and if i do not have a plan in place on what to cook i find myself searching for "junk food"...which i try not to buy anymore--my poor kids have been asking for "real chips"...the almond chips were exciting for a while!!! You are right it is easier to resist as we go on as you do not want that sluggish feeling......Your doing awesome Debbie--it has only been 3 weeks and to notice a difference in the way your clothing fit already is incredible..i am starting to belief all that preaching Darci has been doing about Paleo may actually have some truth to it!!!!????

  41. So, we're just over 1/2 way through the Paleo Challenge. How's everyone doing?

    Overall, I feel so much better for having changed the way that I eat. The days that I have my "treat" I really notice the impact it has on how I feel.

    I do have days when I really crave carbs, but overall, I'm finding that as long as I keep a good balance of protien and fat in my diet, I can manage the cravings.

  42. I had a bit of cake on Sunday and it tasted so sweet and kind of gross! That is not my normal reaction to cake. The scale is moving a little (but not much) which was disturbing me, so I checked my tummy and have lost 2 inches. That I found shocking.

    THe thing that I am seeing is that beyond this challenge, I will need to challenge myself to continue and not slip back into and carb intense diet. I also need to help my kids move more away from carbs.

  44. I thought I would update! I am not the best PaleoSintaSaurus(thanks Helen!) all the time but, I am the best I can be and willing to improve.

    Lately,I have been having wicked GRILLED CHEESE cravings. I realized how much ick(sugars, yeast, etc) must be still in my system, though I no longer crave cupcakes or sweet things, just melted cheese on toasted bread.

    So, I have decided to take this up a notch, I have cut out all dairy and sweet veggies (squashes,carrots,etc)for the next while out of my diet, I am hoping that it will subside the craving I am having lately. I am an emotional eater and this past while have been for lack of a better word, emotional. This is a habit I really want to break so, I will attempt to forgo on a weekly cheat day. My last cheat day, I felt icky after and the cravings have come back harder. I may need to withstand for 2 weeks or a month to really make this easier.
    Since Edmonton, I have been diligently ensuring I have enough snacks (Nuts,seeds and avocados) which have been making a huge difference. Like Debb, I have been in a bit of a rut in my menu due to lack of time. I was inspired by Coach Stephan's nutrition class,I have probably heard this before, but it really clicked when Coach Stephan suggested to eat chicken for breakfast, now sometimes I will eat my supper leftover meat with veggies for breakfast it was a weird concept at first eating supper for breakfast, but I got over it when I know my day is going to be hectic and I wont be able to snack, Eggs and veggies will not cut it, having a more meaty(fats) protein with veggies have made a difference, then I don't set myself up to fail.

    Paleo is a lifestyle and with some more practice it will be my lifestyle. I feel that, I am still a novice PaleoSintaSaurus, and my will power has tested and I am overcoming.

    I find it easier to tell people that I am eating Pale than saying it's a gluten allergy, I almost relish the comments and queries that flow after. It's as though I am able to reaffirm my testimony on why Paleo is my lifestyle, and not a restrictive diet to myself each and every time. It helps me keep on keepin on.

    I know I still have along way to go, but I have my Fluxers to support me along the way.

Well this Paleo thing has sured turned me Nutty at least that is what my Ryland thinks.....this morning he asked if i could make him his favorite blueberry pancakes. .....I have no flour in the house..and have been substituting everything with almond or some other type of nut meal since March 01.... and Ryland is on to me. He said whatever you do don't reck them with that almond stuff! I thought oh well he will never know i'll make sure i grind them so fine and put lots of blueberries in. They tured out awesome--i put almond flour, blueberries, cottage cheese, eggs, baking soda and a bit of cream. For a topping i used sour cream with a mashed bannana and pear and a bit of cinnamon. Ater him and his little clone.. ate three each and were talking how good they were...Ryland came up to me with a piece of almond and said explain what this was doing in my pancakes..oops.....he then proceeded to tell me that they didn't taste very good and his little brother agreed. He said geez mom why did you have to turn so nutty on us!!!!!I then asked if they would like some scrabbled eggs and Ryland said what kinda nuts are you going to put in them???

  47. Brenda those sound really yummy!! I've been lucky so far in that my kids don't seem to mind almond flour or coconut flour baked goods. Although they aren't converted. The other day Caeden said "I'm glad Mom won a donut (roll up the rim) because she is on a paleo challenge and she can't have grains and donuts have grains so I can eat it for her." Oooh boy.

    Here is a quick snack dessert that we enjoy. Usually we have used bananas but I think it would be good with berries too! Put one can of coconut milk in a saucepan. Add sliced bananas. Add a teaspoon of vanilla extract and a teaspoon to a few tablespoons of maple syrup (depends for me if I am making it for myself or the kids). Cook on medium heat unit hot. Easy and yummy!

  48. Paleo eating has resulted in some changes in the way I feel as well - in my body and about myself - so it has been pretty darn good so far. I ate some cake the other day - gluten free - but man it tasted so sweet that I couldn't even finish a 1/2 piece - and didn't want it at all.
    I would like an actual recipe with amounts for the pancakes as they sound fantastic - any chance of that Brenda or do I have to just make it up as I go along? Do you substitute almond flour or coconut flour 1 to 1 for regular flour?
    I haven't been wanting to cheat at all so that is cool too!

Sandra--i do not have a recipe..i just used almond flour added some cottage cheese, frozen blueberries, baking soda and salt, 2 eggs and then cream until it looked like the right consistency for pancakes...I tried the ones with coconut flour--they were o.k. but i found them way to rich first thing in the morning--i prefer the almond flour ones. Since my kids stopped eating them once they found an almond i have brought the leftovers to work and have one every morning with my hard boiled egg..they don't taste too bad cold.....
    That is awesome that you aren't wanting to cheat--i am still very tempted by alot of my good ole favorites...but also feel much better without them. For the most part am able to talk myself out of most temptations---however i could not resist a milky way ice cream last week---i ate all the ice cream and then threw out the cone--and only ordered a kids size (that is how i justifed eating it)...it was very yummy!!!!

  50. Here's a recipe for bison burgers that's fantastic:

    Bison Burgers

    2 lbs ground beef or bison
    1/2 cup Dancing Bull Cabernet Sauvignon
    1 medium onion, chopped
    2 tbsp melted butter
    2 cloves garlic, minced
    1 tsp dry mustard
    1 tsp dried thyme
    1 tsp celery salt
    1 tsp black pepper
    1 tsp salt

    Mix ingredients together. Shape into patties and grill.

    I love that there's red wine in them...they feel a little decadent!

    I had a "rough" weekend for Paleo this weekend and boy did I feel it. My energy level is so much higher when I stick to Paleo. I guess I just need reminding from time to time.

    I can't believe that our six weeks is almost over. It's gone very quickly!!

  51. We just finished our Easter supper and made and enjoyed a paleo stuffing with our turkey.

    Easy Peasy - I chopped 3 celery stalks, 2 apples, 2 onions and 4 or 5 portabello mushrooms and 1 cup of pecans (the original recipe had walnuts which I didn't have and only one celery, one onion, one apple). Sauteed in butter (recipe called for olive oil - which I don't have - yes I need to go grocery shopping!). Added poultry seasoning and pepper to taste. Thats it. Yum! Not grandma's but pretty good.

I used the recipe for the Paleo taco chips (using almond flour) and instead of cutting into chips i formed the dough into a oven proof bowl making a taco shell for taco salad...and then i put buffalo meat, tomatoes , avocado,cheese, red peppers, onions, hot bannana peppers, sour cream and salsa over top. It turned out very good..the taco shell did break a bit--but it still worked quite well....

  53. Here is a recipe that we love for potlucks or just as a side dish. A paleo version would not have the sugar. This is from savourlife.ca, from an issue a few years back.

    Squash Bake

    Description:
    Aired October 10, 2007

    There are lots of versions of this recipe. This one uses a little brown sugar and spices, being careful to keep it as a vegetable side dish as opposed to a dessert! Serve it with grilled or roasted poultry.

    Serves 6-8

    Ingredients:
    1 large butternut squash
    2 large sweet potatoes
    1 1/2 tbsp brown sugar
    1/4 tsp each ground cinnamon, nutmeg and salt
    freshly ground pepper to taste
    1 1/2 tbsp melted butter

    Directions:
    Peel squash and sweet potatoes, remove seeds from squash. Cut vegetables in 3/4" cubes and place in an oiled lasagne pan or shallow oven-proof dish. Sprinkle with brown sugar, cinnamon, nutmeg, salt and pepper. Drizzle with melted butter. Bake, covered in 375F oven for 45 minutes. Remove foil and continue to bake another 1/2 hour, until vegetables are very soft and browned.

  54. I have been introduced to another awesome "crunchy snack" this weekend - Kale Chips. You take a bunch of Kale and pull all the leaves off the stem..whatever part of the stem stays on will be soft enough to eat. Rinse and complety dry the kale leaves. Next tear the Kale into bite size pieces and then add 1-2 teaspoons of olive oil and sprinke with sea salt. Massage the oil and salt into each leave. Place on a piece of parchment paper and make sure the leaves are not touching or overlapping..bake in the oven at 350 for 10 minutes..remove and believe it or not it actually turns into an awesome crunchy snack. The best part is it is very healthy..Kale is high in Omega 3 and calcium--so you could pretty much eat the entire bunch if you so desire.....

    One more creation I made this weekend was Paleo Pizza..I used the almond flour recipe however i added some fresh basil, chopped garlic and paramesan cheese right into the crust. I totally baked the crust prior to putting on any sauce or toppings. I made a homemade tomatoe sauce using fresh basil, garlic, olive oil, red onions and crushed tomates. For toppings i used shrimp, avocado, red onion, bell peppers, hot bannana peppers and fresh asparagus.

    I do not do very well with recipes as it never fails i never have all the ingredients so this whole Paleo thing has been an awesome adventure in creating new meals.. ...i have to say my family has been very patient and brave in trying everything that comes across the table!!! However, I have heard through the grapevine that the 3 of them have been spotted at McDonalds.??!!!! I just can't believe it but my sources are pretty reliable!!!!

  56. I haven't been as creative as Brenda has with finding new ideas. I'm not terribly good in the kitchen and don't do a good job of figuring out what goes well together. But, I did expancd my food choices over the past six weeks and have started to select veggies that I wouldn't have attempted to work with prior to this.

    Also, very interesting was figuring out how to handle breakfast choices. I got really tired of eggs after about three weeks. So, meat (chicken or fish) with some veggies in the morning have become very enjoyable. And, they sustain me nicely through the morning.

    Overall, I haven't lost a lot of weight over the last six weeks, but I have lost a couple of inches. That's a nice feeling. Where I'm really noticing it is in my wardrobe! I had several skirts, tops, and dress pants that were too tight to wear prior to this challenge. Now...I wear them without any problems!!! That...for me...is huge.

    Finally, I really notice a difference in how I feel. I have much more energy and don't have stomach upset or discomfort anymore. It's truly amazing how getting some foods that are supposed to be "good" for use (e.g. whole grains) out of our diet can make such a positive difference.

    I've loved all the different ideas that have come up on the blog. This has become a frequent reference section for me when I'm trying to plan some meals. Thanks for all the great ideas everyone...I hope they keep coming. Paleo has made a big difference for me and I plan to keep it up.

    Kale chips will be my next kitchen adventure...

  57. So I am really happy with the results of this challenge. I've lost 2 inches on my belly (maybe a bit more) and lost inches in other places too. I've found that my strength had improved as well and my stamina is much better especially when I am focused on fats in my diet. I too have felt better and have had more energy. I've had a few bad choice nights especially when going out with the girls but for the most part I haven't found the switch to be that difficult. Mostly when out of home it is harder I guess. My Grace time was a minute less so that was good. I'm also pretty excited about doing a pull up.

    This is all important to me especially when I think about the lessening of the insulin/blood sugar roller coaster. I had gestational diabetes during two of my pregnancies and that showed me very clearly how much food can affect you. Having that in my medical history really pushes me to consider paleo as a way to eat overall with other foods being treats but not a regular choice. I hope to be able to do that!

    I've so enjoyed hearing how others are doing and what they are eating! I hope you all continue sharing recipes, I enjoyed the ideas. Good job everyone!
