I have put my updated paelo comments under the March 2 Grace Blogg...we'll have to compare the results of the nacho's...i plan to make the almond flour ones this week-end...how did the Zucchini ones turn out?
Hey Rebecca. I tried the zucchini chips. If you can make them work, let me know what you did. (First problem for me is that I did them in the oven - I need a dehydrator). I ended up chopping them up and adding them to my meatballs, which were excellent... http://everydaypaleo.com/2010/02/18/garden-fresh-meatballs/ (I used bison only - no turkey). I also made the eggplant/cheese "chips" from marksdailyapple, and they were quite good.
Well mine were not chips! They tasted good though(I added spices to the coconut flour and a little cheese at the end) but they were not hard. I also did them in the oven. I think a dehydrator woud be the key. Oh well!

They turned out ok. We didn't add as much honey as it called for and the children would have preferred more sweetness.
