Well, I'm back from fun in the sun! I'm starting the challenge two days late....although I did mention to Debbi that it is totally possible to eat paleo at an all inclusive resort. I um, just chose not to, oops. I did a whopping 4km run and 20 pushups in 8 days, drank countless rum & diet cokes (real coke gives me a headache oddly enough)and don't regret a single moment :)
Anyway, with no fresh food in the fridge for tomorrow (we didn't get back until midnight)...I will resort to my little frozen portions of bison roast, chicken, white fish & frozen veggies to get me through the day until I can get to the grocery store which probably won't be until Friday. I've been 'portioning' for many years. It's economical, reduces waste, and generally helps me make better nutrition choices when I pack lunches or need a quick supper (half time single mom thing, hate cooking for one and it's cheaper to buy larger quantities at the grocery store)
So, that's my paleo tip for the day. Planning ahead: I have a cook fest on Sundays usually, then I portion the meat and veggies into individual servings & pop them in the freezer so I can pick & choose what I feel like on a given day. I do (did) that with rice, pasta, homemade bread as well.
My son came up with an interesting statement while we were eating lunch at the resort...he'd like to try a vegetarian diet for a week. I almost snorted my rum & french fries, lol. So....what does one do if he/she would like to try paleo but is vegetarian?
If anyone at Flux is vegetarian, let me know, I'll look up some recipes as part of my contribution. Can a vegetarian even consider a paleo diet for 6 weeks? Mind boggling!
Day one! I'm off to the market to get some ingredients for these great recipes. I'll try to avoid the bakery section!
