PALEO COMMENTS FOR AUGUST POST HERE

  1. I have been trying to include avocado into my diet as a good fat source. This is an easy nice snack from Mark's Daily Apple. I've also made this in a cheater way using pre-made guacamole and just mixing that with the egg yolks.

    ingredients 19

    Ingredients:

    * 2 hard boiled eggs
    * 1/2 avocado
    * 1 teaspoon hot sauce (or more to taste)
    * 1/2 teaspoon lime juice
    * salt & pepper to taste

    Instructions:

    Peel and halve the eggs and spoon their yolks into a small bowl.

    Mash the yolks with the avocado, hot sauce and lime juice; add salt and pepper to taste.

    Refill egg white halves with yolk mixture, and enjoy!

  2. The Rob, the kids and I are making this together tonight. We use coconut oil or butter instead of the grapeseed oil and honey or maple syrup instead of the agave nectar. With ripe bananas you probably don't even need half a cup of the honey.

    Flourless Chocolate Banana Cake (Gluten Free)
    3 large eggs, separated
    ¼ teaspoon celtic sea salt
    ½ cup agave nectar
    ¼ cup grapeseed oil
    1 cup mashed ripe bananas (about 2 bananas)
    ½ cup cocoa powder

    1.In a Vita-Mix (or other high speed blender), whip egg yolks, agave and salt on medium for 1-2 minutes
    2.Add grapeseed oil and mashed banana and blend for another minute or two
    3.Blend in cocoa powder
    4.In a bowl, whip egg whites to stiff peaks
    5.Gently fold contents of Vita-Mix (or other high speed blender) into bowl with egg whites
    6.Grease a 9-inch springform pan and pour batter into pan
    7.Bake at 350° for 25-30 minutes

  5. Thanks for sharing that recipe and site Heather.

    Here is a sauce that I LOVE and goes nicely on steamed greens (chard, beet tops, kale, spinach).

    Almond Ginger Drizzle
    1/4 cup almond butter
    2 teaspoons maple syrum
    2 tablespoons shoyu or tamari (I use braggs - not really paleo but well ok)
    1 tablespoon brown rice vinegar
    1 tablespoon grated gingerroot
    1-2 teaspoons hot pepper oil
    1/3 cup water

    Put all ingredients in a small pan on low heat. Using a whisk, mix ingredients until smooth and warm. Serve immediately over cooked vegetables.

    Makes 1 cup.

  6. I finally got around to experimenting with some paleo cooking recipes. The boys and I were tired of the same old thing! I enjoyed all of them, but by far the best was the pizza. It was so easy, and tasted like actual pizza! I made sausage, mushroom and onion with PC Organics old cheddar cheese (made with raw milk). I left out the tomatoes and hummus.

  7. Here's a good one that's very simple . . .

    Turmeric and Zuchinni

    organic beef/zuchinni/turmeric

    Use twice as much zuchinni as beef and be generous with the turmeric.

    Start by cutting up beef and zuchinni in bite-sized cubes (I used ground beef). Grab a frying pan and heat up some coconut oil. Brown the meat first, then add the zuchinni. Count to 60 and then spice it up with the turmeric. Give it 2 more minutes and you're ready to eat!

  8. Indian Style Slaw

    1 bag broccoli slaw
    1 cup fresh diced tomatoes (optional)
    1 tbsp coconut oil
    1 tsp. mustard seeds
    1 tsp. cumin
    1/4 tsp. turmeric
    2 tbsp. lemon juice

    Heat coconut oil and add 1 tsp. mustard seeds. Cover and cook until the seeds stop popping. Next, add the whole bag of slaw, the tomatoes (if using), plus cumin and turmeric. Saute 3-5 minute, tossing occasionally, until the slaw is soft. Add lemon juice. Stir and serve.

  9. And Noah's favourite, then I'm going to bed!

    Coconut Flour Bread (is this the one you made Rebecca??)

    6 eggs (I used ground flaxseeds to replace because Noah cannot eat eggs; the bread was a little flat, but still tasted great)
    1/2 cup melted coconut oil or butter
    1/2 tsp. salt
    3/4 cup coconut flour

    Mix all ingredients together and pour into a small buttered loaf pan. Bake at 350 for 40 minutes.

    Add some butter/ghee and maybe some Prairie Cherry jam with half the sugar. YUM!!!
